Today I want us to work on Akara otherwise known as bean cake or bean balls depending on what you call it in your own part of the world but here in nigeria, we call it Akara so let's get started! For this meal I used honey beans, you can use any beans of your choice as long as you can work with it
Ingredients
2 derica cups of beans (serving of 5 people)
Red pepper (Ata orodo)
Vegetable oil
Salt
Shredded boneless mackerel fish or titus
Onion
Method
1. Pour the beans inside a clean bowl and pour some water over it, allow it soak for 5mins
2. Drain the water from the beans and peel off the skin by rubbing the beans together as though you were kneading
3.once the skin is peeled off, pour some water inside the already peeled beans and begin to seive the shaft away from the beans, this process takes time, continue till the shaft is totally separated from the beans and you have a clean white beans like the picture below.
4. Soak in a clean water till its soft, then blend smooth with a blender to have a paste like the picture below
5. In another clean bowl, scoop some the bean paste and mix a little of your shredded mackerel, diced onions, ata orodo and salt to taste, mix properly and taste to make sure the salt is ok, keep aside
6. Wash and place the frying pan on the cooker,allow the water to evaporate, then pour in your oil, make sure your heat is on medium, allow to heat up for 5mins
7.using a deep scoop spoon, scoop the paste and gently place them in the heated oil, allow to fry till its golden brown, as we have above, do so till all the paste is finished viola you have your bean ball
8. Serve with tapioca, pap, custard, bread depending on what you like
