Ogbono Soup with okro


There are various ways of cooking ogbono, i've a particular way of making mine, I love it mixed with okro and ugu because it gives it this thick and green look making it very appetising.
Let's get started

INGREDIENT
A milk of ogbono
Ugu
Okro
Beef,chicken or kpomo
Smoked fish
Seasoning cubes
Pepper
salt
Meat stock
Palmoil

METHOD
1. Pour your already grounded ogbono into the pot for cooking, add enough quantity of palm oil and stir
 to dissolve the ogbono, on low heat, once that is
done,

2. Pour your Meat stock, beef or chicken,add your kpomo( kpomo is the skin hide of a cow or ram, every edible and gives your food some spice),pepper, grounded cray fish, already washed smoked fish, salt to taste and allow to cook

3. Wash the okro(for a milk cup of ogbono 50naira worth of okro is ok for it) grate it and keep aside also wash the ugu, soak in saline water for 5minutes and cut, then place aside

4. When the soup ingredient is properly mixed( i.e the ingredient don't appear seperate but mixed and combined, then you add the okro first stir properly, then add the ugu also stir and allow to simmer for 5minutes before bringing down

5. Serve with wheat meal, semovita or akpu( fufu) as shown in the picture below

Beans and sauce

We individually have our different way of cooking beans, I love exploring foods as long as it come out tasty and delicious. I've had to work on various beans project, we have the ewa agonyi, porridge beans, beans and corn, veggie beans e.t.c here is one I made this weekend
Beans and sauce is a very delicious meal for the family, I'm really not a fan of beans but I try as much as possible to make beans delicious and appetising for me to eat it, here's my recipe, I'm more of the Nigerian way of measurement,so please do ask questions if you are lost

Ingredients

A derica cup of beans
Seasoning cubes
Salt
Curry leaves
Yam
Pepper (ata orodo)
Onion
Curry and thyme
Palm oil

METHOD
 1. Wash the beans and place in a pot of water to per boil for some minutes, after it boils, drain the water,wash the beans add salt and put on fire to cook
2.peel the yam, wash, put it in a clean pot with water enough for its cooking add some salt, then place on the cooker,once cooked bring it down and drain the water 
3. Wash and blend your pepper,onions in a food processor preferably manual, then put it in a small pot, add enough quantity of palm oil and place on fire and stir,while frying add your seasoning cube,salt,curry and thyme keep trying till it fried enough, then you bring it down
4. Wash the curry leaves and soak in saline water for 5minutes, drain the water, then pour it into the beans on fire already cooked, stir and bring the beans down
5. Now serve the beans in a plate, put the yam on top then place the sauce on it

Grand mama rice with beef Cutlets



Grand mama rice as I call it or granny rice whichever way you choose to call it is a native rice that has the looks of jollof rice but it's very different from Jollof rice. I discovered grand mama rice way back in the 90's when a neighbor of mine regularly makes it for her kids and when I asked her what kind of style of cooking it was, she'd say it's grandmama rice, it doesn't require much effort just mix the ingredients and voila, you have the delicious rice and so I decided to try it out and got stuck to it.
Let me give you my recipe on how to make grandmama rice

Ingredients
1derica cup of rice for 5 servings
Smoked fish 2 (I use sharwa or titus)
Pepper (ata orodo)
Onions
Iru
Palm oil or groundnut oil (any wworks)
Cray fish or prawn (optional)
Meat (any of your choice)

Method
1. Wash your pepper and onions together (enough to suit the amount of food you are making, I used 50naira worth for 1derica and sometimes more because I love my rice hot and spicy) blend with a food processor preferably the manual not the electirc

2. Wash your Iru (locust beans) I used 100naira worth, Iru gives the food the native tasten wash thoroughly and ensure no stone particle is remaining

3. Wash your rice and keep side

4. Wash your fish,prawns or crayfish and set aside

5. Set the pot on fire, pour a considerable amount of palm oil(what I used for this), pour your grounded pepper and onions stir, add the Iru, salt to taste and seasoning of your choice, stir, add your fish shredded, prawns or crayfish and stir, allow to fry for some minutes then pour water enough to make the rice, add your rice, stir and leave to cook

6. Once cooked, you can add curry leaves (optional) before bringing down the food from the cooker, mix properly and serve

7. It's advisable to eat it with a glass of fresh juice to cool down the hot spicy pepper lol

NB- the food don't necessarily have to be hot and spicy, you can make it less however way you want it

Eggs in veggie

Individuals with different likes and dislikes, I've a passion of having my bread with different sauces, this is because I'm not a fan of bread, so when I'm faced with having bread as my breaky, I try as much as possible to make it palatable and presentable.
Today Eggs in Veggies is a sauce that is diverse, it can be eaten with bread, yam, fries, rice and whatever you wish to have it with, it's simple and easy to prepare, all ingredients can be found around you! Let's get started


Ingredients
Spinach a bunch
Tomatoes
Pepper (ata orodo)
Spices
Seasonings
Vegetable oil
Onions
Salt to taste

Method
1. Wash your spinach in clean water till you are sure it's clear of sand
2.chop and put aside
3. Wash your tomatoes, peppers and onion and put aside
4. Place your non stick frying pan on fire, pour in your vegetable oil (1cooking spoon)
5.pour the tomatoes,pepper,onions and allow to fry for some minutes, add your spices,seasoning and salt to taste, allow to fry for 5minutes, add your eggs(I used 4), allow to fry for 2mins, add your veggies and stir once properly mixed, bring down from the fire and serve

Potato Coaster and veggies in cream

Today's breakfast is a little bit interesting, I love cooking and trying anything new, whatever comes up in my mind that feels palatable I put them into plates. Well today I'm willing to share this recipe with you on my very own Potato coaster and veggies in cream, ok yes I gave it that name because it soothes the ingredients involved, most of my dishes I made on my own I name them according to what comes first in my mind and so the birth of Potato coaster and veggies in cream. facebook.com/kamchessenterprise
INGREDIENTS
Potato coaster for 5servings
8 tuber of Irish potatoes
6eggs
4 juicy tomatoes
A bell of Green pepper
Ata orodo 4 bell
A bulb of onion medium size
Peas (optional)
Medium size mackerel 2(debone and mashed)
Seasoning cubes
Salt to taste

FOR
Veggies in cream
6 leaves of cabbage
A bunch of lettuce
3 juicy tomatoes
A bulb of onion
Baked beans
Baked peas
A bulb of cucumber
2 bell of green pepper
Mayonnaise

Method
1. Peel and wash the potatoes, neatly slice them and put them in pot, spice with ur seasoning cubes,salt and spices of your choice, I use curry and thyme,with a pinch of garlic and ginger, now pour little water into the mixture and place on fire
2.wash the fresh mackerel spice and season then cook on medium heat with little water, now let the water dry in the pot before putting down the fish, now place the already cooked fish on a plate, then begin the process of removing the bones, once that is done set it aside
3.slice ur veggies for potatoe coaster i.2 your tomatoes, onions, green pepper and all pour into the potatoe on fire and allow to simmer, let the water dry into the mixture of the potatoes and veggies leaving a little water

4. As seen above, now break the eggs into another bowl, add 2 tablespoon of floor, then whisk together till the flour dissolves
5.pour the mixture of potatoes and veggies in a bowl and pour the egg mixture and stir together
6. Get your non stick baking pan and spray with a baking spray, set your oven to medium heat and allow to heat up for 5 mins
7. Pour the mixture into the baking pan and place in the oven, allow to bake for 20mins, always checking at intervals to ensure its cooking evenly

8. The picture above is the mixture of all ingredients. Once this is baked, bring out of the oven and allow it to cool. Cut and serve with veggies in cream
For VEGGIES IN CREAM
1. Wash and soak all your veggies in salt water
2. Slices them separately into different plates
3. Dress each vegetable accordingly in another plate
4. Scoop some mayonnaise into the dressed vegetables, add little syrup if you want it to be sweeter
5. Mix all together, scoop some in your plate and serve with your potato coaster with fresh juice

Bean balls (Akara)

It's been a long weekend lovelies and I must say a very busy one, got lots of interesting projects I'm working on, yes I would also share it with you here when I'm done.
Today I want us to work on Akara otherwise known as bean cake or bean balls depending on what you call it in your own part of the world but here in nigeria, we call it Akara so let's get started! For this meal I used honey beans, you can use any beans of your choice as long as you can work with it
Ingredients
2 derica cups of beans (serving of 5 people)
Red pepper (Ata orodo)
Vegetable oil
Salt
Shredded boneless mackerel fish or titus
Onion

Method
1. Pour the beans inside a clean bowl and pour some water over it, allow it soak for 5mins
2. Drain the water from the beans and peel off the skin by rubbing the beans together as though you were kneading
3.once the skin is peeled off, pour some water inside the already peeled beans and begin to seive the shaft away from the beans, this process takes time, continue till the shaft is totally separated from the beans and you have a clean white beans like the picture below.                                                                                                                      

4. Soak in a clean water till its soft, then blend smooth with a blender to have a paste like the picture below
5. In another clean bowl, scoop some the bean paste and mix a little of your shredded mackerel, diced onions, ata orodo and salt to taste, mix properly and taste to make sure the salt is ok, keep aside
6. Wash and place the frying pan on the cooker,allow the water to evaporate, then pour in your oil, make sure your heat is on medium, allow to heat up for 5mins
7.using a deep scoop spoon, scoop the paste and gently place them in the heated oil, allow to fry till its golden brown, as we have above, do so till all the paste is finished viola you have your bean ball 
8. Serve with tapioca, pap, custard, bread depending on what you like

Spicy tasty chicken

Good morning lovelies, by popular demand I was asked to give recipe of grilled chicken, couldn't come up with a catchy picture of how the end product should be, so I got this online( picture above not mine) :) but it sure saved me great stress.
Everyone has their own method of cooking, baking, grilling and all. But today I would like to share with you my own method of making this spicy tasty chicken( grill chicken). Please note you can use turkey or gizzard any that appeals to you

INGREDIENTS
A kilo of chiken laps
Coconut milk
Spices (garlic, ginger, curry, thyme)
Seasoning cubes
Salt to taste
Vegetable oil or olive oil
Suya pepper

METHOD

Wash you chicken laps properly ensuring that no dirt can be found
Place them in a large bowl enough to contain
In a seperate bowl pour your coconut milk (quantity depends on how many chicken laps you want to grill, for example 1cup of coconut milk would go for a kilo of chicken laps)
Pour your spices in moderate proportions, add your seasoning cubes and salt to taste
Using a fork, poke some holes in the chicken, so as to allow the spice sink in during marinating
You marinate for 6hours

Grilling
Set your barbeque grill to how hot you want it, if you are using automatic, for those using Gas cooker grill let the flames be moderately hot not too hot else you have burnt chicken, for me I use the locally made grill outdoor grill :)
Now neatly place the chicken on the grill and allow to cook , regularly turning them on intervals,when it begins to show sign of dryness sprinkle your olive oil or vegetable oil on it, this makes it moist and juicy.
Once properly cooked, use a spatula to lift and place on a clean plate
Place the Suya mixture in a paper foil, I do spice my mixture with pepper irrespective of the fact that it has its own taste, now pick the already cooked chicken one by one roll them in the Suya mixture then place back on the grill to allow it sink in, always make sure you keep the chicken moist by oiling once this is achieved, you Have the spicy tasty chicken ready, serve neatly in plates or disposable foils plates
Please coconut milk is optional, you can use chicken brooth if you aren't a fan of coconut and also for those allergic to peanut please don't use Suya mixture, try fried tomatoes mixture it works perfectly, happy grilling www.facebook.com/kamchessenterprise

Rice and Pepper stew

Hello lovelies, it's been a while. Yes I've been trying out recipes, well of course this is one of my favorite food, I love it, maybe because of the spicy fish, meat and the rest additives I include but either ways, it gets everyone, sniffing in and drinking water dues to its hotness and yet they can't stop asking for more lol!
So I would be sharing with you my own recipe on ho to make this sumptous stew.
Ingredients for Rice
Rice 1derica 
Water
Salt
Onions

Method

Wash the rice and place in a pot of water on your cooking gas
Let it simmer for 10mins
Bring it down and rewash with cold water till you can get most of the starch out
Put it back into the pot of water (just enough quantity to cook the rice), then place it on the burner to cook
Once the water is almost drained, cut a bulb of purple onion or any other onion you have( not spring onion)
Cover and allow it to cook for 2mins, by which the water in the rice is completely drained, bring down the pot from the burner and serve

Pepper stew

Tomatoes
Pepper (ata orodo)
Onion
Ginger, Curry,Garlic spices
Seasoning cubes
Fish
Meat
Iru(locust beans)
Palm oil
Salt
Egg

Method
Now for this aspect, I included meat and egg I didn't use it in the picture above because I was in a hurry, so for those that who are not, I advice you include them to get another tongue biting taste
For starters, I don't know the english name for the fish I'm about to mention Panla is what the Yorubas in nigeria call it. It's not mandatory to stick to this type of fish though I used it, you can also use mackerel, tuna any other fish that agrees with spice
I got my smoked Panla, washed them and seasoned them with the spices, I used 3 because of the quantity I was making, you can use more depending on quatity
Then get your already cooked and seasoned and fried meat, dice neatly and place in a plate, set this also aside
Peel your hard boiled eggs, wash with clean water and set this equally aside
Wash your tomatoes and peppers and onions, blend with a food processor, I used the regular hand blender is gives it this native taste.
Wash your locust beans otherwise known as Iru in yoruba, it's health benefits is enormous, set this also aside
Now wash your pot for stew and place it on the burner, turn the flame on, pour in your blended,tomatoes, peppers, onion and allow the water to drain
Once drained, pour your palmoil into the steaming mixture and stir 
Put in your spices, seasoning cubes and salt to taste 
Keep stiring till the stew begins to show sign on being fried
Pour your fish, meat, egg and keep stiring so the stew sinks into them 
Once that is achieved and your stew shows signs of properly fried sauce, add little water,cover and allow to simmer for 5mins
Then bring it down and serve with your rice

I love my food hot, I'm not a fan of cold food, well I ate mine with salad and cold kamchess Zobo, enjoy and don't forget to share your own food, stay blessed

Embeded bread with veggies

I've been so busy trying to put up dishes, working on various bead projects but I didn't forget the blog, I just needed to come up with good recipes for you to try
I call this bread picata but better still and simple, embeded bread with veggies :) let's get started
Ingredients:
Bread
Vegetable mix
2eggs
Mayonnaise
Spices (curry, thyme)
Seasoning (chicken flavor cube)
Salt to taste
3table spoon of oil

Method:
For the bread I use yale bread as shown in the picture
below
I used one loaf for this just in case you are making for two people you can use 2 loaves.
We start by washing, cutting the veggies, as you can see in the picture below, I used cucumber, cabbage, lettuce, pepper, onion .                                       
Put on your cooker, place your frypan on low heat, add a tablespoon of vegetable oil, pour your veggies in the fry pan, with your spices and stir till it's properly mixed, pour into a plate.
For the next step you fry your eggs, now for me, I like my egg spiced, hot and delicious, now after frying your eggs we move to the next step which is the making of the bread


Slice the bread in the middle, to make it into two, then spread your mayonnaise over the bread, place the fried egg in between then add your veggies
Get a foil paper wrap the bread inside the foil paper, note you can use shredded beef or chicken instead of egg, depending on what you want.
Now place the already wrapped bread on your non-stick fry pan or a microwave and heat round for 5minutes.
Once properly heated you bring it out, place it neatly on a plate and serve with hot chocolate or juice, depending on what you want.
I love mine hot, so I take it hot with hot chocolate.

Premier edition of F.O.H.A

Hey lovelies, it's been a while we updated here and yea we truly missed everyone, we had a lot of event lined up in December but we happy that everything went successful. The premier edition of the face of hygiene africa beauty pagaent held on the 7th of December at the prestigious hall of Lilygate hotel lekki, had a lot of dignitaries present. We had the media house raypower, rhythm fm, leXHan_place,kennis music and more. All contestant did their best but three beautiful ladies emerged as winners in categories as follows the winner, the face of Kamandposh and the model for FOHA.
